The Great Pantry Challenge

I'm super excited to have guest blogger Lissette Tougas, who has accepted my 

The Great Pantry Challenge!




I asked Lissette to go through my kitchen and come up with some meal ideas with the ingredients that I already had on hand. 

And boy, did she deliver!

Here's what I started with, cleaning out the pantry this a.m.:




Here are the results:

1.Butternut Squash with tomato sauce over Gnocci

2.Caramalized pork/beef over rice

3. Chicken and Asparagus barley risotto

4. Chicken Satay with carrot slaw, cucumber and bean sprouts over Vermecelli

5. Rice paper rolls (vietnamese style) using above satay sauce

6. Lemon and Dill Salmon with risotto and baked broccolini

7. Mexican Bean Salad

8. Pinto Beans and caramalized Ham bake (Slow Cooker)

9. Healthy Coconut milk butter chicken (Slow cooker)

10. Falafel and Quinoa Salad

11. Shrimp Skewers (Thai seasoning, lime and Chili sauce) over Brown Rice Noodles with snap peas.

12. Kamut and Quinoa salad with tomatoes, bell pepper, red onion and broccoli

13. Chorizo tacos

Cost of what Sandra already had going to waste in her pantry approx: $38-$40

Boxed: Risotto, Kamut and Quinoa, Falafel, Quinoa, Rice paper, Brown Rice Noodles, Vermecceli

Bagged: Gnocci, Barley, Brown Rice, Pinto Beans

Canned: Chick peas, Tomato Sauce, Coconut milk, Tomato Paste

Cost of fridge/freezer items: $44 approx.

4 Chicken Breasts, 2 Organic Steaks, Box of Shrimp Skewers, bag of Broccolini, Bag of butternut Squash, Salsa, Fish sauce, tamari sauce, Soy Sauce, peanut butter, chill sauce, assorted spices.

Grocery list for Sandra (Fresh foods): $25 (Dirty Dozen organic prices)

2 Bell peppers, 3 tomatoes, 1 cucumber, 1 bunch of asparagus, 2 red onions, 8 mushrooms, 1 bag of carrot slaw, 1 bottle of fish sauce, bunch of cilantro, 1 bag of sprouts, avocado oil

Total :$109

Cost of feeling awesome sauce and like a BOSS: Priceless!
